Happy hump day friends! Congrats on making it halfway through the week! I’m curious to know though, what were your past three mornings like?! Many of you know that by day, I work as a marketing professional, where I get to flex my creative muscles on all sorts of campaigns, website designs and conferences. However, with that come many, many busy mornings, often packed with meetings.
If I had to classify my morning routine, I would say that it’s somewhere between an early morning riser, and a busy meeting-packed morning. I know I personally LOVE waking up early during the week to give myself enough time to squeeze in a workout, shower and still have time to get ready. The one thing that falls by the wayside, though, is the time I set aside for breakfast.
I’m usually TERRIBLE with meal preps and more often than not, I default to either cereal or something I can pick up quickly on my way to work. The truth is though, that after a morning workout, I really do need a nutritious protein hit. Particularly when I need to make it through back-to-back meetings all morning. This is where a simple, easy recipe hack can come in handy.
WITH THAT SAID, I CHALLENGED MYSELF TO CREATE AN EASY MORNING MEAL HACK THAT’S PROTEIN-PACKED AND THAT I COULD BRING WITH ME ON MY WAY TO WORK.
Let’s face it, our mornings are busy, that’s just life, but I hate to think I’m always sacrificing a healthy meal in the morning because I’m rushed for work. So I challenged myself to whip up a breakfast sandwich that was, 1) healthy, and 2) easy to make!
I’ve always found liquid eggs to be the easiest solution – liquid eggs are simply REAL eggs that have been pre-cracked and pre-whisked. Coupled with my personal favourite hack – zapping my eggs in the microwave – I knew this recipe would save me a ton of time in the morning!
For this recipe I used EGG Creations, which are so convenient and quick to cook with. I went with their Fat Free Garden Vegetable flavor because (guess what?) chopping veggies takes time. And with this shortcut you can still get your dose of veggies without any added effort!

There’s no need to make a mess or get your hands full of yolk, plus they don’t contain any chemicals or preservatives. A definite recommendation from me if you’re exploring products to try!
ONLY 4 INGREDIENTS
In my kitchen, many of you know that a general rule of thumb, is the fewer ingredients, the better. And this applies to my breakfast foods too. I hate to complicate things, and adding in a ton of ingredients just isn’t feasible during the morning rush. This 5 Minute Breakfast Sandwich only calls for 4 ingredients!
- 200ml of Burnbrae Farms EGG Creations Liquid Eggs – your choice of flavour.
- 1 English Muffin
- 1-2 Slices of tomato
- 3 leaves of lettuce or kale
And of course, you can get a little crafty by adding condiments like mayo, Dijon mustard or simply salt and pepper to taste.
- Toast your English muffin to your desired heat and texture.
- Pour 200ml of your EGG Creation Liquid Egg flavour into a small bowl, preferably a shallow bowl with a low profile, and zap in the microwave for one and half minutes (90 seconds).
- Slice your tomatoes and pull apart your leaves of kale for topping.
- Assemble your breakfast sandwich, one ingredient at a time.
