With that being said, I’ve seen a lot of love and support from my followers on instagram lately that has been overwhelmingly positive. Reaching 5000 followers was a big milestone for me to celebrate. Over the past few weeks, I’ve share a TON of recipes & food pics on social media, but few on the blog. So today, I’m making it up, with these 5 snacks ideas that generated plenty of buzz on social!
These 5 snack ideas are also 100% vegan, and 100% good for you!
So to help spread healthy living lifestyle inspiration, have a look at these five snacks that are pretty much all go-to’s for me when I’m in a pinch. They all take less than 15 minutes to make, and are all super filling. It’s time say toodles to those late night junk food cravings.
Snack Idea #1 – Avocado Toast with Beet Hummus
As if I needed another way to eat avocados and another reason to love them… Enter avocado beet hummus toast!
A second love of mine?! Hummus! And if it’s got a colour that POPS, my love only grows deeper. <3
You can either make the beet hummus yourself by tossing half a boiled beat into your food processor while making your hummus. Or, a great store-bought option that I quite like is the PC Beet Hummus by President’s Choice.
Once you’ve spread your hummus evenly, you just gotta slice your avocado and any additional toppings you like. I went for roasted chickpeas, just because I had them on-hand, and fresh cilantro.
Snack Idea #2 – Buddha Bowls
I think many of you have been seeing several variations of buddha bowls pop up on my instagram feed! I can’t help it! I <3 them, they’re eye candy and they’re so easy to make.
I usually start my buddha bowls with a bed of lettuce or mixed greens. Then I get creative with the toppings! I usually like a mix of warm and cold ingredients, like fresh tomatoes, and charred purple cabbage. For protein and healthy fats, I’m always down for avocados, and either quinoa or chickpeas.
And for my daily dose of Vitamin A, carrots have become the staple. The key is to eat them raw though. Completely uncooked as to preserve the vitamins & nutrients lost from heating them up!
Snack Idea #3 – Chia Pudding
Who here has made their own chia pudding before?! (if you have, let me know in the comments below!)
This was my first time making chia pudding, and I used a recipe from Angela Liddon’s book: Oh She Glows. I was surprised at how easy it was to make.
Chia pudding is (kind of) an exception to the 15 minutes or less rule I mentioned, in that it has to sit for 2 hours, or overnight before it’s ready. I like to make mine in the evenings and leave it in the fridge overnight. Once it’s ready, it really only takes a few minutes to toss either a smoothie or fresh fruits together to top it!
Snack Idea #4 – Bliss Balls (or energy balls / power balls)
This is one snack I am O-B-S-E-S-S-E-D with! They are SO delicious, and SO easy to make. By now you know that I’m a fan of simple ingredients. These bliss balls only call for three:
- Dates (pitted)
It’s that simple. The ratio of dates, cashews and water is 1:1:1. You would need one cup of dates, one cup of cashes and 1 tbsp of water.
If you’re a chocoholic like my husband, then just add cocoa powder. I’d go with about 2 tbsp or so.
How to make them?! Easy, toss your ingredients in a food processor, and pulse 10-15 times, or for about 1 full minute or so. Roll your ingredients into little individual balls, and place on a baking sheet. The best way to keep them is in the freezer, and you can even eat them from frozen!
Snack Idea #5 – Avocado Burgers
This snack gets brownie points just for looks! I remember the first time I saw an avocado burger online, I couldn’t even tell that the buns were avocados! I thought the burger just had green bread for buns!
Out of the five snack ideas I’ve shared, I think this one might be my fave. It’s so quick to make. You literally just have to slice an avocado in half, scoop out the inside from the skin, and add any ingredients you’d like on the inside.
I’ve seen great avocado burgers with grilled tofu, tempeh, fried beans… the options are endless.
