Whenever I think of waffles, I think of comfort food and family-time around the table.
Growing up, we only had waffles on weekends because weekday mornings were reserved for quick breakfasts like cereal or oatmeal before we were out the door and headed for school… usually in a rush!
Ain’t nobody got time for waffles on weekdays. Am I right?
Maybe. Unless you’re an early riser, have the luxury of ample free time in the mornings, or work from home, like I do now since leaving my corporate 9-5 to pursue my passion, then waffles can be for #WaffleWednesday!
Waffles have always been one of my favourite breakfast foods. Though, I rarely eat them alone. I love waffles topped with fruit, usually fresh citrus and berries, and oftentimes a nut butter for protein and healthy fats. Warm waffles are just so comforting — and I love how you can dress them up in so many ways.
That fresh citrus, though, is always a must. Mine and my heartmate’s favourites are Cara Cara Navels and blood oranges!
I’ve always found oranges (citrus in general really), a nice way to brighten up my meals. Whether I’m making a spring salad, a side of greens, or warm waffles in the morning, fresh citrus is always a prominent player.
One of the reasons we love citrus so much is because it contains powerful antioxidants like vitamin C + A. They’re also super versatile, and easy to take with you on the go. On our most recent drive to Montreal, we loaded up the car with water and snacks, mostly Cara Cara Navels! Ok, ok, I’m digressing here…
Back to this Vegan Orange Zested Waffle Recipe!
Given that citrus is in season primarily from November to May, there’s no reason not to incorporate it into our daily lives, especially since it’s so versatile.
Featured in this recipe is one of my faves: fresh Sunkist Cara Cara Navel oranges.
What you need for this recipe!
Cara Cara Navel Orange Zested Waffles Recipe (V, Veg)
This easy vegan waffles recipe is one of my faves because it features fresh citrus flavours!
For the waffles:
- 2 ½ cup organic all-purpose flour
- 4 tsp baking powder
- Pinch of salt
- 6 tbsp coconut sugar
- ¼ cup fresh grated orange zest I used Sunkist Cara Cara Navel oranges
- 2 ½ cup unsweetened vanilla flavoured almond milk
- Juice of half an orange
- 6 tbsp coconut oil liquid
- 3 tsp vanilla extract
For the toppings:
- Sliced Cara Cara Navel oranges with the peel left on
- Fresh blueberries or any berries you like
- Maple syrup
Pre-heat or plug in your waffle iron on low-medium heat.
In a large bowl, combine your flour, baking powder, salt, and coconut sugar. Whisk together well.
In a medium bowl, combine your almond milk, coconut oil, and vanilla extract. Mix well, and pour into the center of your dry ingredients.
Whisk the above ingredients thoroughly until there are no lumps. Next add in your juice of half an orange, and your orange zest. Mix well within your batter and get ready to pour the batter into your iron.
When your waffle iron is ready to cook, ladle your waffle batter in one serving at a time.
Top with your sliced Sunkist Cara Cara Navel oranges, fresh berries and maple syrup, serve and enjoy!
