If you’ve checked out my Instagram account lately, you’ve likely noticed the influx of yummy fruit & veggie photos that have taken over!
Ever since I subscribed to Fresh City Farms’ weekly organic produce delivery, I’ve had more than my share of daily intake of fruits and vegetables. Me and S have been trying to come up with different recipes to try and new ways of cooking certain vegetables. We’d never even seen a celery root before!
One of the greatest little life hacks I’ve stumbled on recently are these DIY mason jar salads. I know, salad for lunch… how exciting *rolls eyes* but trust me, with the right ingredients and a delicious dressing you lunches for the weeks will be set! The one I made for myself (featured in the photo above) has a ton of organic vegetables from broccoli, to red peppers, tomatoes, green onions, kale and lettuce. I also added some lentils and wild salmon for protein.
These DIY Mason Jar Salads make for the perfect weekday lunches!
The best part about them is that you can make all the mason jar salads you need for the week and store them all in the fridge (sealed of course) and then just grab and go! As for portion sizes, I find the mason jar you see in the photo above to be on the small to medium size for a meal, but if you pick up those wider jars usually used for pickles or olives, those make for the perfect size lunch salad.
Pro tip: adding protein like tuna, chicken, salmon or lentils to your DIY mason jar salad is KEY to staying full for longer periods, specially later in the day. I find it really helps when 4:00pm creeps up on you and you get the major hunger vibes!
Some of my favourite salad ingredients: lentils, quinoa, red chard, kale, green onions, raisins and chicken! Oh and the best way to never get sick of your daily DIY salads, finding the right dressings! I recently found this Asian Sesame dressing from Loblaws’ President’s Choice brand – it is my new obsession, I literally cannot get enough of the stuff! Switching up your dressings from Asian, to Caesar to a olive oil, red wine vinegar and mustard vinaigrette, really keeps things fresh and different.
