Asparagus might actually be my favourite vegetable! S teases me all the time for saying that I have a new favourite vegetable almost every day. First it was spaghetti squash (which is probably my MOST favourite), then it was rapini, and now asparagus. I really need to pick one and commit!
For this week’s vegetable of the week, I chose asparagus. One, because it’s delicious, two, because it’s healthy, and three, because it’s so easy to prepare.
I served these asparagus as a side to black cod served on rice. Once everything was ready, I was too hungry to photograph the full meal, and gobbled it all down before I could get a shot of it. I do have the asparagus here for you, which is the star of this Vegetable of The Week post!
My easy asparagus recipe: grilled, drizzled with olive oil, some chilli flakes and crumbled feta cheese on top!
So what are the ingredients you need for this super easy asparagus recipe? I’ve got them listed for you here.
The Ingredients:
- 1 bunch of organic asparagus (serves 2-3)
- approx. 3 tablespoons of olive oil
- a dash of chilli flakes
- a dash of parsley
- 170-200 grams of feta cheese, cubed
If you cook them up like I do, roasted in the oven for 20 minutes, you can pull them out, let sit for a couple minutes, and add the feta crumble evenly across the asparagus. This is a super easy asparagus recipe that’s great for serving as a side to a main, or even as an appetizer or snack. I like to think of asparagus as a healthy, haute option when hosting dinner parties chez toi!
