Guys! I am OBSESSED with Avocado Toast!
I know, I know, I’m so “2000 and late” to the game here… With all the photos of warm avocado, melting on grainy breads that filled our Instagram feeds last year, but I just can’t get enough!
There are so many ways to get crafty & creative with Avocado Toast!!
This recipe here is legit one of my FAVES. It’s so easy, and so simple. I’m not doing anything fancy with my avocados like rolling them in flowers, no intricate placing on the bread.
It’s straight up sliced avocados, on a warm grainy bread.
Toss some pea shoots (or micro-greens of your choice), some cherry or grape tomatoes on top and BOOM. Finish with some sesame seeds for decoration. Flax seeds if you wanna get EXTRA healthy here, but that’s all there is to it!

With 2017 finally here, a resolution for many of us, I’m sure, is to eat healthier. Now, I won’t go all preachy-preachy on your about the health benefits of avocados… BUT! It if I can leave you with just one note on avos…
It’s OKAY to eat avocados, even though their high in fat!
My friends to me, literally, every day are like “Nick, how do you eat so many avocados and stay thin?”
And I’m just like, “guys, IT’S GOOD FOR YOU!” Seriously though, I’m not one to fall in love with everything those TV doctors share with us, but I did hear a good one once. They said,
The more healthy fats we get from foods like Avocados and Almonds, the better it is for us, because our bodies will store those fats and start rejecting the bad fats.
This is essential for healthy digestion! So why not folks?! Eat all the healthy fats your heart desires!
For now, you can get started with this simple recipe!
- 1 large organic avocado
- 2 slices of any grainy bread of your choice
- I like to add a tsp of butter/EarthBalance once the bread is toasted
- Pea shoots or microgreens to top
- Cherry tomatoes or grape tomatoes
- Salt, pepper & seeds to top
No directions – you’ve got full creative reign here! Get crafty with your ingredients and do whatever feels right!
