The long awaited Maca Powder Pancakes are here folks!
Ever since I shared this photo on Instagram, friends and followers have been messaging me asking for the recipe!
I’m even shocked myself at how easy these are to make. The maca powder makes the recipe sound exotic or “extra”, but I just love adding it in because of the toffee/honeycomb flavour to it! (oh, and the health benefits too, I suppose!) 😉
The recipe is super simple, and it’s actually a slight variation of this vegan pancake recipe I shared not long ago!
Maca powder is great! It’s a root vegetable that’s high in antioxidants and nutrients like:
- Vitamin C
Maca powder has been shown to help balance hormones, and even enhance your libido.
When I made these pancakes, I’d run out of fresh berries in the house and had to get crafty with that I could top them with.
Almond butter is always a favourite of mine, since it’s a source of protein and healthy fats. But to ride out that train of exotic + extra ;), I added sliced cranberries!
You would not believe that I’ve had the same bag of fresh organic cranberries in my fridge for over two months!
The COMPLETE opposite of fresh strawberries (who spoil in like, a day), fresh cranberries keep their form for months! So I’ve literally been using cranberries from the same batch in photos on my Instagram feed since January 2018!
Anywhoooo, the magic of these vegan maca powder pancakes is not in the toppings! It’s what’s on the inside that counts 😉

Easy vegan maca powder pancakes recipe!
These vegan maca powder pancakes are actually so easy to make. And the health benefits of maca are some of my favourite!
- 1 1/4 cup all purpose flour
- 3 tbsp coconut sugar white sugar works, too
- 3 tbsp maca powder
- 2 tsp baking powder
- 1 1/4 cup unsweetened vanilla almond milk
- 2 tbsp coconut oil liquid
- 2 tsp vanilla extract
Pre-heat your griddle to medium heat, and add a tsp of vegan butter (Earth Balance) to prevent pancakes from sticking.
In a large bowl, add and whisk together your dry ingredients (flour, coconut sugar, maca powder, baking powder).
Next, add in your wet ingredients, and whisk until your batter contains no lumps.
When ready, ladle your pancake batter onto your griddle one by one.
Serve and enjoy!
