Like many of my friends and family, I’m someone who’s often on the go, and with that comes the need for some flexible meals that I can take with me if need be. For this reason, a quick, easy & healthy snack / lunch recipe is a must.
Snack wraps or salad wraps can be so delicious, and so flexible. You can add any types of veggies, raw, roasted or sautéed, and they can be bursting with flavour.
This roasted broccoli & purple cabbage veggie wrap recipe is one of my favourite go-to’s!
All you really need are some fresh vegetables, and nice blend of spices to really pull out some bold flavours. Another great way to pull out some delicious flavours, are with some infused hummus or salad dressings. A classic caesar dressing is one of my favourites, especially drizzled over some warm vegetables.
Salad wraps are great, but sometimes I just want a warm meal.
Enter: roasted / sautéed veggie wraps! How much do you love sautéed onions & mushrooms?! They mix so well with so many other veggies and they really add a nice pop of flavour to your meals.
Have a look at how these super simple ingredients mixed with a little olive oil and spices to give you just what you need for an easy, healthy wrap.
- Fresh raw broccoli
- Raw purple cabbage or baby cabbage
- Micro greens of your choice to top
- Blended spices of your choice – I use Raw Spice Bar’s Caraway Blend for this recipe.
- 2 tablespoons of olive oil
- 2 tablespoons of caesar dressing
- 1 gluten-free basil or spinach wrap of your choice
On medium heat, preheat pan with olive oil and lightly sauté your broccoli and cabbage for 5 minutes. Add your spice mix to the pan, and let simmer on low heat for 2 minutes.
I like my wraps warmed up a little, so I usually just toss the wrap on top of the sautéed veggie pan for like a minute or two.
Plate your wrap, and gently top with your sautéed veggies. Add micro greens or sprouts to top, and lightly drizzle your caesar dressing to finish.
How easy was that? The best part is how great it is on the go You can wrap it up in aluminum foil and pack it as a lunch. Or, simply fold the bottom and sides, and off you go!
