What a week! With half spent on the East Coast and half on the West, I still haven’t decided whether or not S and I are coming or going.
One thing is sure, our van (named tortuga) is packed and we are already on the move from one BC city to the next.
Have a look here at what we have planned for our travels in British Columbia.
And here are the seven moments that inspired me this week, in this 50/50 split between Toronto and Vancouver!
With a broken fridge still sitting in our kitchen, fresh produce and healthy salads were in our cards Sunday night. It totally set the tone right for the week ahead, and ensured nothing went to waste, as we prepped for BC!
Monday morning I was so excited to let the producers of my new Ontario Wood desk, into our home, to get it all set up. Stay tuned for some upcoming photos I’ll be sharing with you!
On Tuesday I took a break out of my workday to make this blueberry-tahini smoothie bowl. Colour wasn’t perfect, but it’s the health benefits that count!
While I’m not generally a fan of airplane wing pictures, I AM a fan of nature’s beauty. I just had to capture this invigorating cotton-candy sky as we glided through Vancouver’s clean air.
Day one in Vancouver meant picking up a pizza from Virtuous Pie, only to find out that they’re opening a location in Toronto; January 2018! (yay!)
One of my favourite activities in life (aside from eating), is discovering new places at which to eat! So on day two in Vancouver, a trip to Kokomo for macro bowls and green smoothies was a must! When I put together my Vancouver Travel Guide, Kokomo and Virtuous Pie will BOTH be in the top list of plant-based places to visit in Vancouver.
Saturday night was reserved for a Lebanese dinner for four at Nuba with Jordan of Bruce’s Roots, and Amanda of All She Does is Eat. These two vegan babes were so sweet to give us all the deets on Vancouver + the best places to eat and hike!
