I can’t think of another vegetable I may like more than brussel sprouts.

Well, maybe spaghetti squash.

Maybe.

But brussel sprouts are up there! Let’s just get that cleared up. On instagram today, as part of a Whole Foods campaign, I shared how this little vegetable #MakesMeWhole! 

Let me also say, that green vegetables in general make me feel whole.

Sometimes, I can think of no better meal than a classic stir-fry with tofu and greens. And to be honest, it’s become quite the go-to meal for the heartmate and I at the end of a long day, and neither of us really FEEL like cooking.

We want the nutrients, we want the flavour. We want to feel whole from the foods we put into our bodies.

Brussel sprouts are LOADED with Vitamin C + fiber.

Finding organic brussel sprouts can be tough, though, at Whole Foods, it’s never an obstacle.

Some other health benefits of brussel sprouts are the magnesium, phosphorus, potassium, and calcium they pack.

Seasoned just right, and baked until golden and crispy, these little sprouts can add so much nutritional value to your meal that no other veggie can. In the same way, of course!

They’re easy to dress up, simple to prepare, and loaded with health benefits. It should honestly come as no surprise that I love them this much and that they make me feel WHOLE!

Simple (but Delicious) Oven Roasted Brussel Sprouts Recipe (V, GF)

Brussel sprouts are easy to dress up, simple to prepare, and they pack a delicious + powerful punch of health benefits.

Ingredients

  • 1 lb organic brussel sprouts (or 16 oz)
  • 1/2 tsp thyme
  • 1/4 tsp garlic powder
  • 1/2 tsp curry powder
  • 4 tbsp olive oil

Instructions

  1. preheat oven to 350 degrees

  2. slice your brussel sprouts in halves 

  3. add all ingredients to a ziplock bag or bowl, and mix well 

  4. lay your seasoned brussel sprouts on a aluminum foil or parchment paper lined baking sheet

  5. roast in oven for 30 minutes, rotating brussel sprouts once halfway
