What’s your favourite way to enjoy waffles?! With maple syrup and jam?! How about Nutella & peanut butter?! While I’m guilty of the PB and Nutella combo, I happen to love my waffles topped with fresh berries!
I was making these waffles over the holidays recently when I realized how seldom I actually MAKE my own. I LOVE enjoying them over brunch when I’m out with S or with friends. When I’m at home though, waffles are rarely on the menu.
“But making waffles seems… daunting”
I’m not gonna lie and say that making waffles is as easy as cereal. With the right recipe though, it can be pretty quick, and pretty effortless.
A fully vegan waffle recipe
I’ve come across a ton of recipes online that called for milk and eggs, which is normal to really get that fluffy waffle texture. But if you’re looking for a great vegan substitute, I’ve got you covered 🙂
Milk is always easy to swap out for almond milk. I always find the eggs tricky when it comes to vegan recipes, specially with baking.
Only 8 ingredients!
As a general rule of thumb in my kitchen, the fewer ingredients, the better. I always like to keep the total number of ingredients required for a recipe to a minimum. Complicating things, just… well… complicates things! Plus, the fewer ingredients we use, the better they interact with one another to pull out some awesome natural flavours.

- 1 1/2 cups of unsweetened vanilla almond milk
- 1 tbsp freshly squeezed lemon juice
- 1 1/2 cups of flour
- 1 tsp baking powder
- A dash of salt
- 2 1/2 tbsp of avocado oil (canola oil works, too)
- 1 tbsp of vanilla extract
- 2 tbsp organic maple syrup
In a large bowl, whisk your almond milk and lemon juice together and set aside for 2 minutes.
While your almond milk and lemon juice mix is settling, in a large bowl, combine your flour, baking powder and salt, and mix well.
Next, stir your remaining liquid ingredients; avocado oil, vanilla extract & maple syrup, into your almond milk mixture.
Add your dry ingredients from you medium bowl, to your wet ingredients in the large bowl, and whisk until you’ve a nice, smooth batter with little to no clumps.
Pre-heat your waffle iron to a medium-high heat, and follow the directions listed to cook your waffles.
Top with ANYTHING YOU LIKE!
