So, the first time I heard the words “Vegan Egg”, I’m not gonna lie. I was like… ummmmmmmmmmm, what?
Then I was all:
Aren’t eggs not vegan by definition since they come from animals?
How could someone manufacture a vegan egg?
What are vegan eggs even used for? And what’s inside of a vegan egg?
All valid questions, right? Then I found out that the term “vegan egg” was just like the terms on restaurant menus that offer things like “vegan BLT” or “vegan general to a chicken”.
The term “Vegan Egg” is just used as a substitution.
When I searched Minimalist Baker’s vegan chocolate chip cookie recipe, that’s when I learned what the egg substitute was.
Vegan Eggs are made with either chia seeds or flax seeds.
I personally prefer the chia seed version (also called a “Chia Egg”). Some of the most delicious cookies I’ve made, were made with chia eggs.
Chia Egg vs Flax Egg. What’s the difference?
The difference between the two is obviously that one uses chia seeds and the other uses flax seeds. But here are the ratios to use for recipes that call for vegan eggs, or recipes that call for chicken eggs that you want to substitute:
Flax egg | 1 tsp of flax seeds = 1 regular egg
1 medium chicken’s egg is equal to:
- 1 tsp ground flax seeds / ground flax meal
- 2 1/2 tsp water
Chia egg | 1 tsp of chia seeds = 1 regular egg
1 whole chicken’s egg is equal to:
- 1 tsp chia seeds
- 3 tsp water
So simple right?! For both of them, all you have to do is whisk the seeds together with the water and let sit for about three to five minutes or so. After it’s settled, you’ll get a texture similar to that of an egg. How cool?! Best part, fully plant-based, no animal cruelty involved, and no supporting factory farms.
